Technical Profile
Langhe Nebbiolo is a wine that reveals early emotions. It is like the baby of Barolo that shows three years in advance how can be the future of Barolo. Fermentation is carried out for 15 days at low temperatures, 24-28°C, followed by a soft pressing and ageing in large Slavonian oak casks for 10 months at a temperature of 18 °C. The wine is bottled and refi nes 3 months more before release. This traditional process allows the maintenance of the freshness, fruity and spicy notes of an easy-to-drink and fragrant wine, unique and elegant as its land.

Technical Profile
Spontaneous fermentation carried out by indigenous yeasts for about 12 days in concrete tanks, controlled temperature (22 – 25 C initially, 29-30 at the end ), followed by submerged cup maceration for 40 – 60 days, stable temperature 29 C. After the racking off, the malolactic fermentation starts, and it lasts about 15 days at 22 C. Ageing: 4 years in Slavonian oak casks (4500L) with a further refining in bottle for 6 months.
Vineyard Liste
The cru orginated around 13 millon years ago due to erosion of the overlying terrain. As a result its composition differs slightly from the other lanhe lands. Liste essentially acquired acompletion of macro and micro elements that give the future wine an unequalled complexity and longevity. Highly visible from the curves of the secondary road that rises from Barolo towards the old Castello della Volta, the vineyards of this renowed cru cover around 6.75 hectares, with a southern exposureand an altitude that varies from 270 to 330 meters above sea level.

This is the classic, traditional “Formula” used by the ancient Barolo Families to produce a Barolo which embraces and melts each of the peculiar characters of the different vineyards and terroirs of the Barolo area. The Barolo Classic Borgogno is made by the combination of the grapes coming from five of the most prestigious vineyards of the Barolo area: Cannubi, Cannubi San Lorenzo, Fossati, Liste, San Pietro delle Viole. This is not just a Barolo, it is much more. It fully reflects the elegance and the power of a real Barolo from the Village of Barolo.

Vineyard Cannubi
The heart of the entire Barolo region, Cannubi originated around 11 million years ago through sedimentation from the Padano sea. It is the most famous and renowned cru of Barolo, mentioned in historical documents that date back to as early as 1700. It has an excellent soil intricacy, formed by large clayey limestone marls and pleasant climate that make this hill one of the most suitable vineyard farming areas in the world. The Barolo from Cannubi has more elegance and longevity than all other Barolo. In this cru the winery owns vineyards that cover around 1.30 hectares, with southern exposure and an altitude that varies from 290 to 320 meters above sea level.

Process: After spontaneous alcoholic fermentation in steel there is a period of maceration on the skins. The malolactic fermentation that follows takes place in cement tanks. The wine then ages in 54 hl barrels of Slavonian oak.
Aroma & Flavour: Intense ruby red. Strong notes of cherry with floral accents. On the palate, full fruit and pleasant freshness. Tannins are supported by a lovely freshness and full fruit. Tannins are felt but not aggressive.

Vigna Casi is the expression of a single vineyard. This is our time-honored Riserva obtained exclusively from Sangiovese grapes from the Casi vineyard, which encompasses all its characteristics. It is an elegant, supple and fascinating Riserva where the ample range of aromas are balanced with each other and persistent. With every sip there is renewed amazement. It is, along with Castello di Meleto Gran Selezione, the best expression of Meleto.
Grape variety: 100% Sangiovese
Process: After spontaneous alcoholic fermentation in wood, a period of maceration on the skins follows with malolactic fermentation taking place in cement tanks. 50% of the wine ages for 18 months in Slavonian oak barrels while the other 50% ages in barriques of second and third usage.
Aroma & Flavours: Ruby red with increasing garnet hues due to ageing. Alluring aromas of violet, cherry and berries, combined with pleasant spicy notes. Round and velvety. Very elegant and supported by thick and smooth tannins. Persistent and intense on the finish.
Food pairing: Perfect with first courses of ragu and wild game. Excellent paired with aged cheeses such as pecorino.

The Castello di Meleto Chianti Classico Gran Selezione is the greatest expression of our single-varietal Sangiovese. This is a limited production wine coming from individual parcels located within the Casi and San Piero vineyards. The constant minerality present in our wines is matched here by a gentle power, extraordinary both on the nose and palate. This wine has a great capacity for ageing; only time will reveal its unique characteristics.
Grape variety: 100% Sangiovese
Process: The wine ferments in truncated oak vats. After the maceration it is transferred directly into barriques where the malolactic fermentation occurs and frequent batonnage is performed. Aging takes place in barriques of second and third usage. The maturation period varies from 24 to 30 months according to the vintage. Minimum aging of 6 months in the bottle.
Aroma & Flavour: Intense red, almost purple. The nose is powerful and rich, with spicy and balsamic notes accompanied by aromas of ripe red fruit. On the palate it is enveloping, supported by dense but well-balanced tannins that open to a long finish with extraordinary intensity.
Food pairing: Pairs divinely with truffle dishes and aged cheeses. Excellent with wild game and stewed meats.

Camboi is the acronym for Campo dei Buoi, an area of Meleto that was used for the breeding of oxen from the Middle Ages to the early 1960s. In the 1970s Malvasia Nera del Chianti vines were planted in this same area, which today produces a unique wine. Camboi is the latest creation from Castello di Meleto, but it is quickly making a name for itself within the lineup. This wine is challenging to categorize as it is quite rare for the Italian wine scene. The Malvasia family is a boundless one yet it is very difficult to find a single-varietal Malvasia Nera del Chianti as historically it has always been used in blends with other Tuscan native varieties.

Process: During the maceration period, non-invasive vinification operations are carried out for 20 days. After the racking, the wine is transferred to barriques of third and fourth usage.
Aroma & Flavour: Intense and full ruby red color with violet hues. On the nose the aromas are characteristic of the variety, with small red fruits and floral notes. Good alcohol content and consistency are accompanied by a structure that perfectly balances freshness and softness, with ripe well-integrated and velvety tannins.
Food pairing: Pairs with red meats and poultry, and semi-aged cheeses.

Fiore is our tribute to Merlot – a single-varietal wine produced in the characteristic Chianti style. This is a wine of character with unique and surprising features. Winter rains contributed to late budding during the 2013 vintage. A hot August and a temperate September, both characterized by strong temperature variations typical of the Gaiole in Chianti area, facilitated ripening. Alcohol content was more contained than in 2011 and 2012 but flavors reached a complete ripening.

Process: Spontaneous alcoholic fermentation takes place in 55 Hl truncated wood vats at a maximum temperature of 28 ° C for about 25 days. The wine ages for 12 to 14 months in French oak barrels followed by 12 months of bottle ageing.
Aroma & Flavour: Intense purple red color with floral, berry and balsamic notes. On the nose, slight toasted notes with a subtle spice. Full and generous with soft tannins, good acidity and excellent intensity on the finish.
Food pairing: Perfect with roasts and wild game. Ideal with aged cheeses.

Alto is one of the most marked expressions of the area.
Its geological characteristics and microclimate are expressed distinctly by a varietal – sangiovese – that has always called Tuscany home.

Aroma & Flavour: Ruby red and bright. It focuses on notes of undergrowth, humus, cherries and violets with hints of wild berries, raspberries and blueberries, and a mineral vein in the background. Varietal taste: fresh, sapid, elegant, with decisive tannins but well-woven into a fruity taste and with lingering mineral finish.

The vineyard where the cabernet grapevines grow enjoys a balance of clay and rocky backbone, and a favorable gradient.

Aroma & Flavour: Concentrated ruby colour in the glass. An aromatic framework that is dense and rich in shades of blackberry and blueberry jam, black cherries in syrup and then a thick cover of spices and roasting reminiscent of coffee, with bursts of herbs and balsam. The palate is strong, voluminous, vigorous, with copious, rounded tannins. Aftertaste in line with the characteristics of the nose: fruity, persistent and spicy.

Technical Profile
Fermentation is carried out for 12 days at low temperatures, 24-28°C, followed by a soft pressing and ageing one part (70%) in stainless steel tanks for 10 months and the other part (30%) in large Slavonian oak casks for 10 months at a temperature of 18°C. After that the two parts are blended together for 6 months of refining in bottle. This traditional process allows the maintenance of the fresh acidity and spicy notes of an easy-to-drink, fragrant, unique and elegant wine.
